A grape is the non-climacteric fruit, botanically a true berry, that grows on the perennial and deciduous woody vines of the genus Vitis. Grapes can be eaten raw or used for making jam, juice, jelly, vinegar, wine, grape seed extracts, raisins, and grape seed oil. Grapes are also used in some kinds of confectionery. A sultana was originally a raisin made from a specific type of grape of Turkish origin, but the word is now applied to raisins made from common grapes and chemically treated to resemble the traditional sultana. Raisins are about 69% sugars by weight, most of which is fructose. Raisins are also high in certain antioxidants, and are comparable to prunes and apricots in this regard. As with all dried fruits, raisins have a very low vitamin C content. The natural sugar in grapes crystallizes during the drying process. Raisins are sweet due to their high concentration of sugars. If they are stored for a long period, the sugar inside the fruit crystallizes. This makes the dry raisins gritty, but does not affect their usability. The sugar grains dissolve when the raisins are swelled in (hot) water. Diabetic patients may use raisins instead of regular sugar. Raisins are dried grapes available packaged or in bulk. They are eaten out of hand or used as an ingredient in sweet and savory dishes. Raisins could be eaten raw or used in cooking and baking. KEEPING OF RAISIN: Keep it in cool & dry place.
